Healthy Zucchini Bread Recipe (Chocolate Chip)

Use up your extra zucchini's and whip up this healthy zucchini bread recipe! This recipe comes together so quickly and makes perfect slices of thick, soft and moist zucchini bread. The outside of this bread will be slightly browned and the center will be very soft and moist!

Ingredients

Dry Ingredients

  • 1 cup white flour
  • ½ cup whole wheat flour
  • 2 tbsp flax seed meal
  • 2 tsp cinnamon
  • 1 tsp baking soda
  • ¼ tsp salt

Wet Ingredients

  • 2 eggs
  • 1 ¼ cup shredded zucchini squeeze excess liquid
  • ½ cup plain greek yogurt
  • ½ cup apple sauce
  • ½ cup pure maple syrup
  • ¼ cup light olive oil
  • ¾ cup chocolate chips

Instructions

  • Preheat your oven to 350 degrees and grease a loaf pan. I use 8x4 or 9x4.
  • In a large bowl, add all the dry ingredients. Mix until combined and set aside.
  • Now shred the zucchini using a grater. Using a thin cloth or paper towel, squeeze out excess moisture from the zucchini.
  • In another large bowl add the wet ingredients (besides the chocolate chips) and whisk until smooth. Now add the dry ingredients into the bowl with the wet ingredients. Using a spoon or spatula fold the mixture until combined. Now fold in the chocolate chips.
  • Add the batter into the prepared loaf pan and bake at 350 for 45-55 minutes or until fully cooked through.
