Equipment

  • Baking sheet
  • parchment paper

Ingredients

  • 3 cups rolled oats
  • 2 ½ cups crushed corn flakes or other corn/rice cereal of choice
  • 1 cup raisins can sub craisins
  • ½ cup unsweetened shredded coconut
  • 1 cup salted cashews
  • ½ tsp salt
  • ¾ cup white chocolate chips
  • ¼ cup coconut sugar
  • ½ cup honey
  • ¼ cup + 1 tbsp coconut oil melted and slightly cooled

Instructions

  • Preheat your oven to 300 degrees and line a large baking sheet with parchment paper.
  • In a very large bowl combine the oats, crushed cereal, raisins, coconut, cashews, salt and chocolate chips. Mix until combined.
  • In a medium bowl whisk together the honey, coconut oil and sugar. Now, pour the liquid mixture over your dry granola ingredients and mix until fully coated.
  • Dump the mixture onto your baking sheet in an even layer. Using a spoon or a spatula, pat down the granola to make and even layer.
  • Place baking sheet in the preheated oven and bake for 18 minutes. After 18 minutes turn off your oven and leave granola in the oven for 2-3 hours until fully cooled. Do not mix or stir. Once the granola has fully cooled, remove it from the oven and break it up into chunks using your hands. Enjoy!
