Oat flour Cookies (Chocolate Chip, Gluten Free)

Oat flour chocolate chip cookies are slightly crispy, chocolatey, and just pure delicious. They are made with finely ground oat flour and other ingredients you probably have on hand!

Ingredients

  • ¾ cup white sugar OR coconut sugar
  • ½ cup butter melted
  • 1 egg room temperature so it doesn't solidify the butter
  • 1 tsp vanilla extract
  • 2 cups oat flour finely ground, 200g by weight
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½-¾ cup chocolate chips

Instructions

  • Whisk the sugar and butter in a large bowl until fully combined. Then add in egg and vanilla. Continue to whisk until very smooth
  • Add the dry ingredients: oat flour, baking soda and salt into the wet mixture. Fold until combined and then fold in the chocolate chips.
  • Chill for the dough in the fridge for 1-2 hours. Make sure you do this so the cookies don't spread too thin.
  • Preheat your oven to 350 degrees. And line two baking sheets with parchment paper.
  • Roll 18 cookie dough balls and place them on two baking sheets lined with parchment paper. Bake at 350 for 12-15 minutes and enjoy!
